Mixing up Waffles


During a recent visit to my sister’s home, I found myself cleaning out her kitchen cabinets. But it didn’t start that way. After I presented her with giant zucchini from my garden, she was quick to request my famous zucchini bread. But with loaves of bread in the oven, I turned my focus onto cleaning her cabinets.

Yes, I clean other people’s kitchen cabinets.

Well, not just everyone, but let’s just say my sister and my mother always benefit from my visits.

Tucked into a corner is where I found it. A shiny Belgian waffle maker that I had always wanted for myself. I’m not sure why I’ve never bought one as they tend to pull me in at the kitchen shops, taunting me to take one home. I have a traditional square waffle iron, but there is something about thick Belgain waffles on a Saturday morning that make you feel cozy as you cuddle up with a cup of tea. It’s comfort food at its best.

My sister could tell I was overjoyed by this simple kitchen gadget and quickly told me to take it home as she wasn’t into mixing up her own fluffy batches.

My search began for finding the best gourmet waffle recipes. A few a tried were just simple with nothing special that made me want to keep the recipe. Then I began experimenting with recipes by adding my own signature twists.

Here’s my favorite:

2 eggs
2 cups flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon honey
4 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1/2 teaspoon vanilla
